Teriyaki Turkey Wraps

Ingredients:

  • Ground Turkey - raw

  • Carrots - raw, sliced into toothpick sized sticks

  • Coconut - dried, shredded - unsweetened

  • Peanuts - dry roasted - chopped

  • Soy Sauce such as Kikkoman Naturally Brewed

  • Carbohdyrate-free sweetener or Agave Nectar (1gm is plenty for entire recipe)

  • Lettuce

Directions:

Pour oil into small frying pan and heat until it begins to sizzle. Place ground turkey in pan using a small spatula to stir, breaking it into small pieces and sauteeing until pink color is gone. Mix soy sauce and sweetener: 10gm soy sauce + carb-free sweetener or 1gm Agave Nectar is sufficient for 30gm of raw turkey. Tear lettuce into pieces the size of your hand. Place seasoned turkey inside. Garnish with carrots, coconut and peanuts. Serve immediately.

Power Salad

Fresh spinach, black berries, avocado, chicken and olive oil w a little granulated garlic and Himalayan sea salt. 

Additional options:

Shredded carrots, red bell peppers, hard boiled eggs, bacon.

Alfredo sauce is made with heavy whipping cream, coconut flour, garlic, salt, pepper & parmesan cheese. 

Low Carb Fish Tacos

Sauté onion & red bell peppers in olive oil (0g carb). Add tilapia (1g/carb per fillet, using the prepared version from SAMs). Heat low carb tortilla (Mission brand smaller low carb tortilla 3g/ tortilla). Add a slice of cheddar cheese (0g). Stuff tortilla with fish & pepper mix. Top with homemade avocado sauce (avocado, olive oil, lime juice, garlic salt. Blend).

Stuffed Bell Peppers

Slow cool chicken breast in the crock pot (or any way you'd like). Shred and add cream cheese (1g per once), buffalo wing sauce (1g/Tablespoon), ranch or blue cheese dressing (1g/Tablespoon), salt and pepper. Stuff into green bell pepper (3g). Bake in the oven until warm all the way through.

Pizza on Low Carb Tortilla Crust

Very lightly oil low carb tortillas (Mission brand small low carb tortilla, 3g carb/tortilla) w olive oil. Top w 1 Tablespoon marinara sauce (shop for the lowest carb you can find. We use Barilla Traditional all Natural , 10g carbs/ 1/2C), add chopped lean meats or pepperoni (0g carbs), then top w cheese (use 0g, check your labels). Pinch of salt, pepper, and garlic power and dried basil. Bake in oven at 400 until golden and crispy.

"Low Carb Sandwiches"

Use low carb tortillas by Mama Lupa or Mission to make sandwiches:

  • Roast Beef, w cheese & mustard

  • Ham & Cheese

  • Turkey, cheese, oil, salt & pepper

  • Italian Subs, salami, pepperoni, black olives, shredded lettuce, onion, basil, olive oil, salt & pepper

Chicken Noodlelss Soup

Start with rotisserie chicken. Pull meat & place aside. Place bones in large stock pot. Simmer for several hours, after first bringing it to a boil. Later filter stock from bones and set aside. Sautee diced onions, in butter carrots & sweet potato in butter. Add homemade stock & shredded chicken. Season with salt, pepper, garlic, and cayenne. Then add chopped spinach at the end. Rotel tomatoes can also be added for a little extra heat.

Pesto Flat Bread

Very lightly oil low carb tortillas (Mission brand small low carb tortilla, 3g carb/tortilla) w olive oil.

Top with homemade pesto sauce: blend fresh basil, olive oil and fresh Parmesan cheese. Add any toppings you would like, count carbs of each ingredient. Top w fresh mozzarella cheese (use 0g, check your labels). Pinch of salt, pepper, and garlic power and dried basil. Bake in oven at 400 until golden and crispy.

Chicken Salad Lettuce Wrap

Shredded chicken breast cooked in the crock pot. Mixed a mayo (check your mayo. Many low fat items are higher in sugar & carbs) & few nuts & herb havarti cheese. Served on a leaf of butter lettuce. Only carbs are the nuts & the lettuce. Avocado can also be added. 
Cranberries are too many carbs for those on the MAD (Modified Adkins Diet, Adkins diet on steroids) but those that aren't counting them as strictly as her could have them and they are a great source of vit C and energy.

Mashed Fauxatoes & Steak & Cheese Toast

Steam cauliflower & let cool. Place cauliflower, butter, cream cheese, salt, pepper & garlic in blender. Fold in bacon & shredded cheddar cheese if desired. Bake in oven. 
Toast low carb tortilla, brushed with olive oil & topped with parmesan cheese & garlic. Toast or broil in oven. 

Pancakes with Homemade Blueberry Jam

Egg whites and cream cheese for the batter. (You can add some cinnamon and/or artificial sweetener if you'd like). Each pancake is 1/2 a carb. Top w butter and a blueberry spread (I made in my magic bullet, blending fresh blueberries and olive or veg oil. (Blueberries are 18grams of carb per cup. So use them sparingly)
